Ingredients

  • 1 cup white sugar
  • 2 Tsp flour
  • 3 Tsp cornstarch
  • 1/4 tsp salt
  • 1-1/4 cup water
  • 1/2 cup lemon juice from fresh lemons, zested & juiced
  • 2 tsp butter
  • 4 egg yolks, beaten
  • 1 9 inch piecrust, baked
  • 4 white eggs
  • 6 Tsp sugar

Preparation

Step 1

1. Preheat oven to 350 degrees F.
Lemon filling:
1. In saucepan, whisk sugar, flour, cornstarch, & salt. Stir in water, lemon juice & lemon zest.
2. Cook over medium heat, stirring frequently until mixture comes to a boil. Stir in butter.
3. Place egg yolks in bowl & gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to boil & continue to cook while stirring constantly until thick.
4. Remove from heat. Pour filling into baked pie shell.
Meringue:
1. In bowl, whip egg whites intil foamy. Add sugar gradually & whip until stiff peaks form
2. Spread meringue over pie, sealing edges at the crust.
3. Bake pie in oven for 10 minutes or until meringue is golden brown.
