Ingredients
- 3 Tbs. olive oil
- 1 small onion, diced
- 2 large stalks celery, sliced
- 1 small bell pepper, diced
- 1 ancho chili, diced
- 1 Tbs. ground ancho chili pepper
- 2 Tbs. cumin
- 2 tsp. Mexican oregano
- 1 tsp. ground chipotle pepper
- 2 small zucchini, sliced
- 1 can corn, rinsed & drained
- 1 can black beans, rinsed & drained
- 1 14 oz. can chopped tomatoes
- 2 Tbs. red wine or water
- Grated cheddar, optional
Preparation
Step 1
In large sauce pan, heat oil over medium-high heat. Add onion, celery & peppers; saute' until cooked through. Add seasonings, stir & cook a few minutes. Add rest of ingredients. Cover & simmer about 20 minutes. Serve with grated cheddar, if desired.
