Ingredients
- 7 to 8 ounces udon noodles or vermicelli
- 4 green onions
- 2 teaspoons sesame oil
- 4 tablespoons soy sauce
- 4 tablespoons water
- 1 tablespoon chopped ginger
- Four pieces salmon fillet โ about 6 ounces each
- One bag of spinach

Step 1
Prepare noodles as label directs add spinach one minute before they are done
Cut green onions into half-inch pieces. Place in glass pie pan cover with sesame oil. Put wax paper on top and cook in microwave 2 to 3 minutes until onions are tender
Stir in soy sauce, water, and ginger into the green onions. Top with salmon, skin side up. Cover with wax paper and cook on high five minutes. Let stand two minutes. Serve on top of noodles and spinach. Pour sauce over the entire thing
