Ingredients

  • 1 lb boneless pork cut into cubes
  • 2 cans (16oz) each oblack beans, drained
  • 1 red or yellow pepper, chopped
  • 1 medium tomato, peeled, seeded, and chopped
  • 1 small red onion, thinly sliced
  • 1 clove garlic, crushed
  • 1/2 tsp ground cumin
  • 2 tsp chili powder
  • 1/2 tsp salt
  • 1 can tomato sauce

Preparation

Step 1

1. Stir together pork, beans, pepper, tomato, onion, garlic, cumin, chili powder, salt and tomato sauce
2. Cover and cook on low 8-9 hours. Spoon into bowls. If desired, top with sour cream and chopped fresh cilantro
