  • Cooking spray
  • 12 loaf Hawaiian sweet bread, cut into 1-inch cubes
  • 4 eggs
  • 4 egg whites
  • 3 cups (2 percent) milk
  • 1/4 cup light brown sugar
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 cups chopped mango (fresh or frozen)
  • 1/2 cup chopped walnuts
  • Maple Syrup



Step 1

The day before: Coat a 13x9" baking dish with cooking spray. Layer bread in dish. In a medium bowl, whisk together eggs, egg whites, milk, sugar, butter, vanilla, cinnamon, and salt. Pour over bread. Flip the cubes to fully coat with egg mixture. Top with mango and walnuts. Cover with plastic wrap and refrigerate overnight.

The next morning: Preheat oven to 350F. Let dish sit at room temperature as oven preheats. Bake 30 minutes or until bread is no longer soggy. Drizzle each serving with syrup. Makes 10 servings.
