    slices Fully Cooked Naturally Smoked Imported Bacon

  • 3

    med. Baking potatoes

  • 1/2

    tsp Kosher salt

  • 1/2

    tsp Black pepper

  • 1/2

    cup Green onion , sliced

  • 1/2

    lb Pepper Jack Cheese , shredded

  • 1/2

    cup Sour cream , if desired

Directions

1 Cook bacon until crispy, cool, and crumble. 2 Scrub potatoes thoroughly, and bake in 400° F oven for 1 hour or until done. 3 Allow potatoes to cool to the touch. 4 Cut in half lengthwise. 5 Carefully scoop the pulp leaving ¼ inch shell (reserve the pulp for another recipe or discard). 6 Sprinkle the inside of the potato skins with salt and pepper. 7 Top with crumbled bacon, green onions, and cheese. 8 Place potato skins on a baking sheet and broil in the oven until cheese melts. 9 Serve with sour cream, if desired.
