Ingredients

  • 2 c. flour
  • 1/1 /2 c. sugar
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 c. fine coconut
  • 2 c. grated carrots
  • 1 c. crushed walnuts (optional)
  • 3 eggs
  • 1/12 c. oil
  • 1 c. crushed pineapple with juice
  • 2 tsp. vanilla

Preparation

Step 1

Mix flour, sugar, cinnamon. baking soda, salt, coconut, grated carrots and walnuts in large bowl. In a separate bowl, beat eggs, oil, pineapple and vanilla. Add to dry ingredients and mix very well by hand. Pour into 9x13 pan and bake at 350 degrees for 1 hour or until fully cooked. Cool and frost with icing


ICING:
1/3 c. butter
1 T milk
1 4 oz. cream cheese (softened)
2 c. powdered sugar
