Ingredients
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp ground cardamom or 1 tsp ground cinnamon
- 2 eggs, beaten
- 1/2 cup cooking oil
- 2 tbsp milk
- 1 tsp grated ginger root
- 2 medium pears, peeled, cored and finely chopped (1 1/2 cups)
- 3/4 cup chopped walnuts
- 1/2 cup raisins
Preparation
Step 1
In a large mixing bowl combine flour, sugar, baking soda, salt and cardamom or cinnamon. Make a well in the center. Combine eggs, oil, milk and ginger root; add all at once to flour mixture. Stir just until moistened (batter will be thick). Fold in pears, walnuts and raisins. Lightly grease muffin cups or line with paper baking cups; fill each 3/4 full. Bake in a 350 F oven for 20 to 25 minutes or until toothpick inserted near center comes out clean. Remove from cups; serve warm.
