Judi Vittetoe's Oatmeal Cake

Ingredients
- Streusel Topping:
- 1 cup old-fashioned rolled oats
- 1/2 cup margarine
- 1 1/3 cups boiling water
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/2 tsp salt
- 1 1/4 cups flour
- 1 cup brown sugar
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/3 cup margarine
- Topping:
- 1/2 cup margarine
- 1 cup brown sugar
- 1 cup coconut
- 1 cup chopped pecans
- 3 tbsp milk
Preparation
Step 1
Cake: Combine oatmeal, margarine and boiling water. Let stand 20 minutes. Add brown sugar, granulated sugar and eggs and mix into oatmeal mixture. Add flour, baking soda, cinnamon, allspice and salt. Beat into the above ingredients. Pour into greased and floured 9-by-12-inch cake pan. Bake at 350 F for 35 minutes.
Streusel Topping: Cut together flour, brown sugar, salt, cinnamon and margarine. Cut together, sprinkle on top of cake, lightly broil.
Topping: In saucepan, over medium heat, combine margarine, brown sugar, coconut, pecans and milk. Mix until margarine is melted. Spread onto hot cake, broil for 2 to 3 minutes until bubbly. If you leave out the nuts, increase coconut to 1 3/4 cups.
