Roasted Red Pepper Soup

Ingredients

  • 8 red peppers- cut in 1/2
  • 2 carrots
  • 2 shallots
  • 1 pear
  • 2 T butter and oil
  • 6 cups chicken stock
  • salt and pepper
  • cream to taste
  • 1/2 t red pepper flakes

Preparation

Step 1

1. roast red peppers for 30 minutes- put in bowl and cover tightly for 1 hour. then peel them.

2. dice up carrots, shallots, garlic and pear.

3. sauce all in butter and oil until soft.

4. add chicken stock and simmer.

5. put all in blender and puree. add cream, salt, pepper and red pepper flakes.
