Steak Salad with Apples, Blue Cheese and Walnuts

Ingredients

  • 3 Tbsp olive oil, divided
  • 6 Tbsp chopped walnuts, toasted, divided
  • 1 Tbsp chopped shallots
  • 1 Tbsp cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and black pepper
  • 1 triangle steak (4-6 oz), seasoned with salt and black pepper
  • 5 cups sliced romaine lettuce
  • 2 Tbsp crumbled blue cheese
  • 1/2 Pink Lady apple, sliced

Preparation

Step 1

Preheat oven to 450F.

Pulse 2 Tbsp oil, 2 Tbsp walnuts, shallots, vinegar, Dijon, and honey in a mini food processor until walnuts are minced; season with salt and pepper.

Sear steak in remaining 1 Tbsp oil in an ovenproof skillet over high heat until browned, 2 minutes. Flip steak and transfer skillet to the oven. Roast steak until medium-rare, 3 minutes; let rest 5 minutes, then slice.

Toss romaine with blue cheese, apple, remaining 4 Tbsp walnuts, and vinaigrette; serve with steak.
