Ingredients

  • 1/4

    c. wheat germ

  • 1

    t cinnamon

  • Pinch salt

  • 4

    pkgs Trivia sweetener

  • 1

    T sugar-free vanilla syrup

  • water

  • omit cinnamon and add lemon flavorings and ginger ale instead of water for a lemony cookie.

  • add butterscotch flavoring for a richer, buttery flavor.

Directions

Spray a 1 1/4 cup or 1 cup square plastic obtained with non-stick cooking spray. Mix all ingredients in a separate small bowl or cup until it is an oatmeal-type consistency. Using a rubber scraper, put mixture into the cup with the plastic container. Microwave on high (in our 700 watt microwave oven) for 2 minutes. Let stay in microwave for 30 seconds then microwave again on high for another minute. Let cool on rack in the container for at least 2 minutes. Turn over and tap the bottom of the container if you want the cookie out of the container otherwise top with soy nut butter or soy cream cheese - whatever you like.
