Raspberry Swirl

Ingredients

  • Crust:
  • 1/2 C butter
  • 1 C all-purpose flour
  • 2 T sugar
  • Filling:
  • Raspberry flavoured gelatin
  • 3/4 C boiling water
  • 1/2 15oz pkg frozen raspberries, partly thawed
  • 1/2 C milk
  • 16 large marshmallows
  • 1 C whipping cream

Preparation

Step 1

Crust: Crumble butter, flour and sugar until mealy. Press into ungreased 9x9 pan. Bake in 350F oven for about 15 minutes or until golden. Cool.

Filling: Dissolve gelatin in water. STir in berreis. Chill until syrupy.

Combine milk and marshmallows in top of double boiler. Heat over boiling water, stirring occasionally until melted. Cool.

Whip cream until stiff. Fold marshmallow mixture into cream. Fold into raspberry mixture, stopping while it is still streaky. Pour into prepared pan. Chill.
