Ingredients

  • 2 larges eggs
  • 2 larges egg yolk
  • 5 tablespoons butter
  • 3 tablespoons sugar
  • 3 1/2 ounces dark chocolate
  • 3 tablespoons flour
  • 4 teaspoons good unsweetened cocoa powder
  • Pinch salt
  • 1/8 teaspoon vanilla extract

Preparation

Step 1

Butter 4-5 ½ ounce ramekins. Set in casserole dish.

Put eggs and sugar in large mixing bowl. Mix with mixer until light and foamy.
Melt butter and chocolate in microwave on 30% until just liquid. Mix into egg and sugar mixture. Gently stir in flour, cocoa powder, salt and vanilla.

Fill ramekins. Make sure edges are clean. Tap to release any air bubbles. Refrigerate 30 minutes. Can keep in refrigerator up to 1 week. Pour hot water half way up sides. Bake 425º for 15-18 minutes (don't over bake). Cool 15 minutes. Run knife around edge to loosen, invert on plate. Dust with powdered sugar. Serve with coffee ice cream.
