Ingredients

  • Alpine Muesli
  • 2/3 cup old fashioned oats
  • 1/4 cup ground flaxseeds
  • 2/3 cup almond milk
  • 2/3 cup low-fat plain yogurt
  • 2 tsp vanilla extract
  • 1 tsp or more if you like ground cinnamon
  • 1 cup fresh orange juice
  • 2/3 cup sliced almonds
  • 1/4 cup honey (or try adding packets of Truvia till desired sweetness)
  • 1 1/2 cup grated red apples
  • 2 cups low GI fruits: strawberries, blueberries, cherries, peaches, etc

Preparation

Step 1

In a large bowl combine oats, milk, yogurt and vanilla. Let sit for 15 minutes or overnight. In a small bowl combine orange juice, nuts, and honey. Grate apple and immediately add to orange juice mixture. Stir into yogurt mixture. Add remaining fruit. Serve chilled. Can be kept in fridge for several days.
