Fruit Crunch

Ingredients

  • Filling:
  • 4 cups fruit (berries, rhubarb, or apricot)
  • 2 Tbsp Lemon juice
  • 1-2 cups sugar (adjust to taste)
  • Mix together in heavy pan. Bring to boil and cook until sugar is dissolved. Thicken with cornstarch to a very thick consistency. Set aside.
  • Crust:
  • 3 1/2 Cups Oatmeal
  • 3 Cups Brown Sugar, firmly packed
  • 3 Cups Flour
  • 2 – 2 1/2 Cups melted butter
  • 1 tsp baking powder
  • 1 tsp baking soda

Preparation

Step 1

Mix dry ingredients, add melted butter and combine until moist and crumbly. Pat half the crumb mixture in a 9x13 pan. Add fruit. Crumble remaining crust over fruit. Pat lightly. Sprinkle liberally with cinnamon. Bake in 3500 oven for 35-45 min until crust is crisp and golden.
