Cathy Corbett's Bacon and Persimmons

Ingredients

  • 1 pkg Trader Joe's bacon, chopped into 1" pieces
  • 2 firm persimmons, quartered and sliced
  • 1/2 yellow onion, quartered and sliced
  • 1/2 tsp. finely chopped fresh rosemary

Preparation

Step 1

Saute bacon in frying pan until about 1/2 done and pour out some of the grease. Add the onions and persimmon and continue to cook until bacon is done and onion is browned. Add a little fresh chopped rosemary.
