Ingredients

  • 1 to 2 15 oz cans black beans, drained & rinsed
  • 1 to 2 16 oz cans of corn, drained
  • 3-5 good sized tomatoes, diced
  • 1/2 c. diced red onion
  • 7 T. fresh chopped cilantro
  • 1 t. ground cumin
  • 1 t. red cayenne pepper
  • 2 1/2 t. garlic powder
  • 6 T juice from a real lemon
  • 2 16 oz. cartons fat-free sour cream
  • chips

Preparation

Step 1

Mix ingredients thoroughly, refrigerate or serve immediately with tortilla chips. This dip will be chunky and light in color.
