Shrimp Toast

Ingredients
- Topping:
- 1 lb cooked, de-veined, shelled shrimp (salad, small or medium are fine)
- 1/2 - 1 cup Mayonnaise
- 1/2 - 1 cup Swiss Cheese (any cheese will work)
- 1/2 - 1 tsp Ground Thyme
- Salt & Pepper to taste
- Old Bay Seasoning to taste
- Toast:
- 1 loaf Pepperidge Farm® Very Thin White or Wheat bread.
- Garlic Salt
- Ground Thyme

Step 1
1. Prepare toast - Butter each slice of bread and place on cookie sheet.
2. Lightly sprinkle bread with garlic salt and ground thyme. Slice into quarters (squares or triangles).
3. Toast for 5 minutes or so on a cookie sheet until lightly browned - set aside.
4. Rinse shrimp and finely chop.
5. Stir remaining topping ingredients and chopped shrimp until well mixed.
6. Put into a piping bag (or qt/gal bag - snip end) and place into refrigerator until ready to pipe onto toast.
7. Just before serving, place about a teaspoon or so of shrimp mixture onto each toast wedge and bake at 350 degrees on cookie sheet until the cheese is melted (5 minutes or so).
Serve warm. [A loaf has 20 slices so this makes about 80 shrimp toasts.] Depending on size of shrimp used, you may have some shrimp topping left over.
