Ingredients

  • 1 17.3 oz package puff pastry sheets, thawed
  • 2 tbsp chopped chives
  • 2 tbsp salted butter
  • 3 tbsp all purpose flour
  • 1/8 tsp ground red pepper
  • 3/4 cup half and half
  • 1/4 cup dry white wine
  • 1 4.4 package soft ripened brie cheese, rind removed and cut into small pieces
  • 2 6 oz cans white crabmeat drained
  • 1 lemon, zest only
  • fresh parsley sprigs
  • 1 cucumber, sliced

Preparation

Step 1

1. Preheat oven to 350
2. Roll out pastry sheets and cut into circles with a biscuit cutter. Press circles into a greased( Use Pam to grease) mini muffin pan to form cup shapes
3.Bake for 18-22 minutes or until pastry is golden in color.If pastry begins to brown to quickly, reduce oven heat to 300. remove from oven , cool slighlty in mufffin pans then transfer to a wire rack
4.In a medium sauce panover medium heat, saute chives in butter for 5 minutes. Add flour and ground red pepper and make a roux
4. Whisk in half and half, gradually. Then add white wine and whisk to combine
5. Increase heat to medium high , whisking until mixture thickens and boils for 1 minute
6.Reduce heat to medium, add cheese to half and half mixture , whisking until smooth
7. Add crabmeat, cook and stir for 3 minutes
8. Sppon mixture into pastry cups. Top with lemon zest , parsley and additional crabmeat if desired
9. Serve crab cups on a slice of cucumber
