Fluffy Coconut Pancakes

This recipe makes about 10 pancakes. This recipe can easily be doubled...except for the baking powder. Only use 5 tsp. if doubling this recipe or else the pancakes will be too salty.

Ingredients
- 1 1/2 cups all purpose flour
- 3 tsp baking powder
- 1/2 tsp kosher salt
- 2 tbsp sugar
- 3 tbsp sweetened shredded coconut
- 1 can lite coconut milk
- 1 tbsp melted butter
- 1 tsp pure vanilla extract
- 1 large egg, slightly beaten
Preparation
Step 1
1. Double sift all dry ingredients, this is a must for fluffy pancakes!
2. In a large bowl combine the wet and dry ingredients. Do not over mix.
3. Heat a lightly oiled griddle or non stick fry pan on med/high heat. Pour a heaping 1/4 cup of batter per pancake. Let cook til bubbles on top start breaking and edges of pancake start to dry slightly.
Then flip pancake with a spatula and let cook about 1 min.
