  • Icing:
  • 3 Eggs
  • 1 C. sugar
  • 2/3 C. pumpkin
  • 3/4 C. flour
  • 1 tsp. salt
  • 1 tsp. b. soda
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 8oz. cream cheese
  • 2 TBSP butter
  • 1 C. powder sugar



Step 1

Mix eggs, sugar and pumpkin. Add dry ingredients. Mix well. Pour into a greased pan lined with wax paper. Bake 375* for 15 minutes.

Take out of oven, flip onto a powder sugar covered towel. Peel wax paper off and roll up and let it cool.

Mix icing ingredients well. Unroll cake when cool and ice it then roll back up.
