Candy Cane Christmas Cookie

These Candy Cane Christmas Cookies are the perfect treat to usher in the holidays so grab the kids and start making a batch.
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup sugar
- 1 teaspoon peppermint extract
- 1 teaspoon pure vanilla extract
- 2 1/4 cups all purpose flour
- 1 (12 ounce) package Wilton Dark Cocoa candy melts
- 3/4 cup peppermint candy canes, crushed
Preparation
Step 1
In a large bowl with a electric mixer, beat butter and sugar until light and fluffy. Beat in extracts. Gradually beat in flour. Divide dough in half and form a disk with each half of dough and wrap in plastic wrap;refrigerate for two hours or until easy to handle
Preheat oven to 350 degrees fahrenheit. Between lightly dusted with flour parchment sheets, roll each half of dough to 1/4 " thickness. Cut with a floured 1 1/2 " round cookie cutter. Place one inch apart on parchment lined baking sheets.
Bake 8-10 minutes or until firm. Cool slightly on baking sheets, then transfer to wire racks to cool completely.
Melt chocolate per instructions. Crush candy canes and place in a bowl. Dip half of each cookie into melted candy melts ;allow excess to drip off. Sprinkle with crushed peppermint candy canes. Place on waxed paper until set.
Place in a airtight container with waxed paper in between in a cool place.
NOTE; I store all my christmas cookies in separate containers with waxed paper in between in the basement.
