Eggnog CupCakes

Ingredients

  • Icing:
  • 1 pkg Pound Cake Mix
  • 1 1/4 cups Eggnog
  • 2 large eggs
  • 1/2 teaspoon freshly grated nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup of softened butter
  • 3 ounces of Cream Cheese, softened
  • 1 (16 oz) pkg of Confectioners' Sugar
  • 1/4 cup eggnog
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon freshly grated nutmeg

Preparation

Step 1

Preheat oven to 350 degrees. Line 24 cupcake muffin cups with paper liners.

Beat cake mix, 1 1/4 cup of eggnog, eggs, 1/2 teaspoon nutmet, and 1/2 teaspoon vanilla extract in a bowl using an electric mixer on low until batter is blended. increase speed to medium and beat for 2 more minutes. Spoon batter into muffin cups.

Bake in oven for 18 to 20 minutes until toothpick comes out clean.

Cool and mix icing sprinkle with decorations.
