Flaxseed Loaf

Ingredients

  • 1 cup stone-ground whole wheat flour
  • 1/2 cup flaxseed meal
  • 1/2 cup wheat bran
  • 1/3 cup quick oats
  • 11/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cardamom
  • 1 Tbsp olive oil
  • 2 ea eggs
  • 1 cup buttermilk
  • 1 Tbsp molasses
  • 1/3 applesauce
  • 1/3 cup orange juice
  • I tsp vanilla
  • 1/4 cup dried apricots
  • 1/4 sliced almonds

A savory muffin packed with Omega-3 and fiber.

Mix dry ingredients separately. Combine eggs, buttermilk, applesauce, oil vanilla, orange juice and molasses and stir until molasses is distributed evenly in the liquid. Stir liquid into dry ingredient slowly and blending until all the dry ingredients are moistened. Stir in apricots and almonds
Spoon into loaf pan. Bake for 50 minutes in 375 degrees F oven.
