SIDE DISH - Twice Bakes Potatoes

Ingredients
- 4 small baking potatoes
- 1/2 cup skim milk
- 1/2 cup plain nonfat yogurt
- 1/4 cup (1 oz.) shredded low fat processed american cheese
- 1/2 tsp. paprika

Step 1
Wash potatoes and pat dry. Prick each potato several times with fork. Microwave on High. 12 minutes, turning and rearranging potatoes after 6 minutes. Let potatoes stand 5 minutes. Cut potatoes in half lengthwise. Scoop out pulp, leaving shells in tact. Set shells aside. Mash pul in large bowl using a fork or potato masher. Add milk and yogurt, beat at low speed of mixer until smooth and well-blended. Spoon potato mixture into shells and place on microwave platter. Top stuffed potatoes evenly with cheese and sprinkle with paprika. Microwave on high 30 seconds or until cheese melts.
