Mango Shrimp Ceviche

Ingredients
- 2 - lbs. Shrimp, cleaned and deveined
- (I use the 31-40 count, and cut up into bite size pieces)
- 4-5 - Mangos (Peeled and diced)
- 2 - Stems of green onion diced
- 1/2 - Bunch of Cilantro
- 1/2 - Diced Red Onion
- 1 - Diced jalapeno
- 1 - Diced Serrano Chile
- 2 – Roma tomatoes diced
- 4 – Lemons
- 2-3 – Avocados
- Salt
- Pepper

Preparation
Step 1
Dice shrimp (bit sized pieces), mangos, green onion, cilantro, red onion, chiles and tomatoes. Squeeze the juice of 4 lemons. Mix altogether in a bowl, and add the lemon juice. Salt and pepper to taste.
When you are ready to serve, dice avocado on top or mix into the whole dish. Serve with tortilla chips or on tostada shells. I always have Tapatio in case people want it spicier too! Enjoy!
*When it is in season, I use the Costco sliced Mango – it’s comes in a bowl ready to dice! It is equivalent to about 3-4 mangos (much easier!)
**You can add more jalapenos or serranos based on the heat you like!
