Ingredients
- 3 cups fresh or frozen zucchini, thinly sliced
- 1 medium onion, chopped
- 1 1/2 cup shredded cheddar or mozzarella
- 1 cup Bisquick
- 1/2 tsp. each salt, pepper, oregano and basil
- 4 large eggs
- 1/2 cup of oil

Step 1
In a large bowl mix by hand or electric mixer all of the ingredients except the zucchini. Fold this in by hand.
Turn into butter pie pan. Bake at 350 degrees for 45-50 minutes. Serve warm, room temp. or cold.
