Ingredients
- 2 cups rolled oats (not instant)
- 1 cup pecans - chopped
- 1 cup slivered almonds
- 1/2 cup whole unsalted almonds
- pinch of salt
- 1 cup maple syrup
- 1/2 cup canola oil, plus more for the pan
- 1/4 cup honey
- 1 cup mixed dried fruits such as dried plus and cranberries
Preparation
Step 1
Preheat oven to 325. Rack in bottom third of oven. Coat baking sheet with canola oil.
In a large bowl, combine oats, pecans, slivered and w hole almonds (or other nuts) and the salt and stir. Set aside.
Combine the maple syrup, canola oil and honey in a saucepan and heat over medium heat until just bubbling. Pour maple syrup mixture over oat mixture and stir with a wooden spoon until the mixture is thoroughly coated.
Spread the oats onto the baking sheet in an even layer. Bake 30 minutes. Using a metal spatula, turn the granola over and bake 10 minutes more. Remove the pan from the ov3en. Sprinkle the dried fruit into the granola. Let cool completely in the pan. Pour into a decorative jar with a tight-fitting led and decorate with ribbons.
Makes about 3 cups (6 servings)
