Pancakes

This recipe makes great pancakes. Just enough for 2 people.

Ingredients

  • 1 large egg
  • 3/4 cup milk
  • 2 Tablespoons vegetable oil
  • 1 1/4 cup flour
  • 1 Tablespoon packed brown sugar
  • 1 Tablespoon baking powder
  • 1/4 teaspoon salt

Step 1

Preheat griddle to 350.

In a medium sized bowl beat together egg, milk, and vegetable oil.

In a large sized bowl mix together flour, brown sugar, baking powder and salt. Make a well in the middle and add egg mixture. Stir till just combined.

For each pancake pour 1/4 cup batter onto hot griddle. Cook pancake until bubbly on top, puffed and dry around edges. Turn and cook other side until golden brown.

BUTTERMILK PANCAKE: Substitute 1 cup buttermilk for the 3/4 cup milk. Degrease baking powder to 1 teaspoon. Add 1/2 teaspoon baking soda.
