Ingredients
- 1 lb ground beef
- 2 C chopped sweet yellow, red and/or green peppers
- 1 small onion, chopped
- 3 garlic cloves, minced
- 2 small potatoes, peeled and cut into 3/4-in cubes
- 2 medium tomatoes, chopped
- 1 can (8 oz) tomato sauce
- 2/3 C chopped pitted green olives
- 1/2 C sliced fresh mushrooms
- 1/2 C dry red wine or beef broth
- 1 Tbs Louisiana style hot sauce
- 1 Tbs Worcestershire sauce
- 1.5 tsp reduced sodium soy sauce
- 1 tsp pepper
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1/4 tsp cajun seasoning
- hot cooked rice

Step 1
In a dutch oven, cook the beef, peppers, onion and garlic over medium heat until meat is no longer pink; drain. Add the potatoes, tomatoes, tomato sauce, olives, mushrooms, red wine/broth and seasonings.
Bring to a boil. Reduce heat; simmer, uncovered, for 30-35 minutes or until potatoes are tender. Serve with rice.
