Slow Cook Beef Stew

Ingredients

  • 2 pounds beef top round steak, cut into 1-inch cubes
  • 8 medium carrots, cut into 1-inch pieces
  • 1 pound small red potatoes, quartered
  • 1/2 pound sliced fresh mushrooms
  • 1 medium sweet red pepper, chopped
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1/4 cup all-purpose flour
  • 1 can (6 ounces) tomato paste
  • 3/4 cup beef broth
  • 1/3 cup dry red wine or additional beef broth
  • 1 1/2 teaspoons salt
  • 1 teaspoon minced garlic
  • 1 teaspoon pepper
  • 1/2 teaspoon dried thyme

Preparation

Step 1

In a large skillet, brown beef on all sides. In a 5-qt. slow cooker, combine the carrots, potatoes, mushrooms and red pepper. Pour tomatoes over the top.

In a small bowl, whisk the flour, tomato paste and broth until smooth. Stir in the wine, salt, garlic, pepper and thyme; pour into slow cooker. Top with beef.

Cover and cook on low for 6-8 hours or until meat is tender. Yield: 6 servings.

This stew has great flavor and easy to put together. I omitted the red pepper and added 1 medium onion. The hubby loved it so much that with every mouth full he said this is great...a keeper at my house.

Very thick and flavorful and not too salty like other stew recipes. My whole family loved it including the 9 month old! Will definitely make again. I did add celery and onions only because I had them on hand.

I don't usually like tomato based beef stew, but this was delicious!I added onions and celery, otherwise I followed the recipe exactly. I was a little worried about the beef not cooking being at the top. The recipe didn't say mix everything. I did mix it when the liquid started rising to the top and it cooked perfectly. The meat was so tender, the vegetables cooked to perfection. This is a keeper!

I live alone so this was a great recipe.

I enjoyed it for several days and froze two portions for another time. I made it just as suggested and other than adding extra veggies I wouldn't change a thing.

This was a great stew! I hate chicken noodle soup so when I am sick, I crave stew and this hit the spot! I added some celery and and onion to this and it was the best comfort food!

This is a wonderful stew recipe. I don't add the mushrooms because my husband doesn't like them. I was worried that the veggies would be over done but they were great. I have passed this slow cooker recipe to my friends and everyone loves it. I'm making it tomorrow for my husband's birthday meal....it's what he asked for!
