Ingredients
- Water 2 Qt
- Sage leaves 30 each
- Lemon verbena, 12-inch branch of 6 each
- Grapefruit, juice and zest of 2 each
- Limes 6 each
- Lemon 2 each
- Mint leaves 8 each
- Sorrel leaves 6 each
- Lovage, 6-inch branch of or celery hearts with leaves 2 each
- English cucumber, peeled 1 each
- Passion fruit purée 1/2 C
- Salt 1/2 tsp
- Simple syrup/agave nectar as needed
Preparation
Step 1
1. Heat water to a boil.
2. Strip leaves from herbs. Juice and zest grapefruit. Juice limes and lemons.
3. Add herbs to boiling water and remove from heat. Allow to steep for 5 minutes. Add grapefruit zest to herb tea 1 minute before straining.
4. Reserve grapefruit herb tea and discard solids.
5. Juice cucumber and combine with herb tea, citrus juices and passion fruit purée. Chill mixture quickly over ice, then season with salt and simple syrup and serve.
