Lemon Meringue Pie

  • 1 1/2 cups sugar
  • 1/3 cup cornstarch
  • 1 1/2 cups water
  • 3 egg yolks, slightly beaten
  • 3 tablespoons butter
  • 1/4 cup lemon juice
  • 1 tablespoon grated lemon rind



Step 1

Mix first three ingredients in a saucepan. Cook over medium heat, stirring constantly until mixture boils. Boil 1 minute. Slowly stir at least half of the hot mixture into egg yolks. Blend into hot mixture in saucepan. Boil 1 minute longer. Remove from heat. Continue stirring until smooth. Add rest of ingredients. Cool. For meringue: Beat egg whites until stiff, gradually add sugar to taste. After placing on pie. broil to brown.
