Russian Beet Salad

My grandma used to make this salad for me when I was a kid. Its delicious and very simple to put together.

Ingredients

  • 4 medium carrots
  • 4 medium potatoes
  • 6 small beets
  • 1 medium red onion
  • 1 can on peas
  • 10 pickles
  • Olive oil
  • Salt and pepper to taste

Preparation

Step 1

1. Boil potatoes, carrots and beets till fork is easily inserted. Cool

2. Peel the vegetables and cube in smal pieces. Add chopped red onion, peas and cubed pickles (I cube the pickles as small as I can so they don't overwhelm the salad)

3. Add olive oil, salt and pepper. Toss and serve

Tip:
This salad is better the next day. Refrigerate and add olive oil and seasoning as you go.
