One Bowl Chocolate Cake

Ingredients

  • 3/4 cup plus 2 tbsp all-purpose white flour
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder, preferably Dutch process
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup buttermilk
  • 1/2 cup light brown sugar, packed
  • 1 large egg, lightly beaten
  • 2 tbsp canola oil
  • 1 tsp pure vanilla extract
  • 1/2 cup hot strong black coffee
  • Powdered sugar for dusting

Preparation

Step 1

Preheat oven to 350 F. Lightly oil a 9-inch round cake pan or coat it with nonstick cooking spray. Dust the pan with flour, tapping out the excess.

In a mixing bowl, whisk flour, granulated sugar, cocoa powder, baking powder, baking soda and salt. Add buttermilk, brown sugar, egg, oil and vanilla. Beat with an electric mixer on medium speed for 2 minutes. Add hot coffee and beat to blend. (The batter will be quite thin.)

Pour batter into prepared pan. Bake 30 to 35 minutes, or until a skewer inserted in the center comes out clean. Cool the cake in the pan on a wire rack for 10 minutes; remove from pan and let cool completely. Dust top with powdered sugar before slicing.
