Butter tart filling

Ingredients

  • 2 eggs
  • 2 cups brown sugar
  • 2 TBSP vinegar
  • 1 tsp vanilla
  • 1/2 c melted butter, cooled (enough to not cook eggs)
  • 1 1/3 c raisins or currants

Preparation

Step 1

Beat eggs until whites and yolks are blended. beat in sugar, vinegar, vanilla. Stir in melted butter and fruit.

Bake at 400 for about 10 minutes for smallish tarts, longer for deeper ones (until bubbly and brownish)
