Blueberry Protein Muffins

Ingredients

  • 1/2 C whole wheat flour
  • 1 scoop vanilla protein powder
  • 1/2 C skim milk
  • 1/4 C sugar free pancake syrup
  • 4 egg whites
  • 1/4 C splenda
  • 3 T splenda brown sugar (not packed)
  • 2 T light whipped butter
  • 1/2 C fresh blueberries
  • 2 T no sugar blueberry applesauce
  • 1 1/2 t baking powder
  • 1/2 t vanilla extract
  • 1/4 t salt

Preparation

Step 1

Preheat oven to 400 degrees
In a medium sized mixing bowl, combine flour, protein powder, splenda, splenda brown sugar, baking powder and salt. Mix well.
In a large sized mixing bowl, combine skim milk, syrup, egg whites, butter, applesauce and vanilla extract. Using electric mixer or a whisk, mix thoroughly until blended.
Add dry ingredients in the first mixing bowl to wet ingredients in large mixing bowl and mix until completely blended. Fold in blueberries.
Line a 6 cup muffin pan with liners
Evenly distribute batter amount the muffin cups.
Bake for about 22 minutes, until a toothpick inserted into the center of a muffin comes out almost clean.
