Huckleberry Pie Like You've Never Tasted!!!

Recipe written exactly as it was given to me.

Kerry made this for an Aging and Adult Services picnic. It was a hit! Yummiest huckleberry pie I've ever tasted. (Recipe given to me August or September 2004 by Mary Stone who lived in Idaho's Silver Valley (Kellogg area)).

Mary said that frozen berries can also be used. The piece I had had actually been frozen and was WONDERFUL!

Note by Cheryl: 11/2004 When I made this recipe, I had an awful time with it and ended up tweaking it. The crust was OK (trying to remember - think more water was needed to make it so it could be pressed into the pan), as was the first layer, but the second layer was a bear. When you get to the second layer, my understanding was that you combined the small package of sugar free instant vanilla pudding with a teaspoon of milk and beat thoroughly. DON'T DO IT! Instead, I would sprinkle a little bit of pudding at a time over the Cool Whip and beat it in with a bit of milk. More milk than called for will probably be needed. When the milk and pudding were mixed and then added to the Cool Whip, I got little lumps of hard pudding in the Cool Whip which I had to continue to add water to and beat until I got most of the lumps worked out. I saved the recipe by adding more Cool Whip after I'd had to add more liquid to get the pudding lumps out. It tasted good but was sure a mess! Then follow the rest of the recipe as called for.

Ingredients

  • 1 1st 1 8-oz 1 1/2 8 1 8-oz pkge cream cheese, 1 cup powder sugar - Beat til mixed smooth 1/2 of 8 oz. cool whip, fold in + place in crust ... set aside
  • 2 2nd 1 1 1 small pkge sugar free instant vanilla pudding, 1 teasp milk Beat thoro add the rest of the cool whip Mix well -
  • 1 to 1 1/2 1st 1/2 cups huckleberries fold them in - if they are in moisture place them on paper towels + dry them out or they will blead ... place on top the 1st layer refigerature til set so it slices easy - enjoy
