Cornbread Dressing

  • Cornbread
  • 3 chicken thighs and drumsticks
  • 5 gizzards and 3 livers
  • 1 yellow onion and 1 bunch green onions
  • 5 boiled eggs
  • Salt, red pepper, black pepper

Preparation

Step 1

Boil 1\2 large pot of water with 1 tablespoon salt and gizzards for 20 minutes. Add rest of chicken and boil for 40 min. Reduce to simmer and add sliced onion for 20 min. Remove chicken and onions. Return broth to boil for 30 min to reduce. Boil eggs peel, and chop. Debone chicken (keep skin). Mince gizzards and liver and chop up chicken. Combine broken up cornbread, yellow and green onions, eggs, chicken and parts, 1tsp. salt, black pepper, and red pepper in a large bowl. Ladle in broth and mix by hand until very moist. Taste and add seasoning as needed.
Spray large glass dish and spread dressing evenl. Preheat oven to 350 deg. Cover dressing with aluminum foil and bake for 40 min. Uncover and bake 20 more min.
