Sherry Glazed Chorizo Sausage

Ingredients

  • 5 uncooked chorizo sausages
  • 1 cup sweet sherry
  • 2 tbs Worcestershire sauce
  • 1 tsp BBQ sauce
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tbs olive oil

Instructions

Fry whole chorizo sausages in a frying pan for 2-3 minutes until well browned all over. Start with a very hot pan and reduce to medium after 1 minute. The sausages should be 2/3 cooked.

Remove the sausages on a chopping board and slice fairly thick on a 45 degree angle. Return to the frying pan and brown the slices on each side.

Sprinkle paprika and cayenne pepper, add sherry, Worcestershire  and BBQ sauces, and cook on high for 3 minutes until the liquid has thickened and caramelised.

Serve on its own with some crusty bread and salad or as part of a larger tapas spread.
