Spicy Chicken with Spinach Orzo

Ingredients

  • 1 1/2 cups orzo pasta
  • 3 oz. spinach, well rinsed
  • EVOO
  • Salt and Pepper
  • 1 large onion, halved lengthwise and thinly sliced
  • 3 cloves garlic, chopped
  • 1/2 jalapeno, seeded and finely chopped
  • 1 lb skinless chicken breast, cut into 1/2 inch pieces
  • 3 tomatoes, seeded and chopped
  • 1 lemon, zested and juiced

Step 1

Cook orzo until al dente. Place the spinach in a colander and drain the orzo over the spinach, return both to pot. Stir in one tablespoon EVOO; season with salt and pepper. Cover to keep warm.

Meanwhile, in a large skillet, heat the remaining EVOO over medium-high heat. Add the onion and cook, until softened. Stir in the garlic and jalapeno and cook for 30 seconds. Push mixture to the side of the skillet and add the chicken. Season with salt and pepper and cook undisturbed for 2 minutes. Stir in 1/4 cup water, the tomatoes, lemon zest and juice and cook, scraping up the bits from the bottom of the pan.

Serve chicken on a bed of the spinach orzo.
