Ingredients
- Glaze:
- 18 pkg lemon cake mix
- 3 oz pkg lime jello
- 3/4 cup water
- 3 eggs
- 1/3 cup vegetable oil
- 1/3 cup key lime juice
- 2 drops green food color
- 1 cup powdered sugar
- 2 1/2 tbsp key lime juice
- Frosting:
- 8 oz cream cheese, softened
- 1/4 c butter, softened
- 3 1/2 c powdered sugar
- 1 tsp vanilla
- Grated lime peel
Preparation
Step 1
1. For the Cake, Heat oven to 350F. Grease 13x9" cake pan or prepare 24 cupcake liners in muffin pans. Set aside.
2. Beat cake mix, dry jell-o, water, eggs, vegetable oil, lime juice and food coloring Mix well for 2 mins. Bake cake 25-35 mins. Bake cupcakes 20 mins.
3. Meanwhile, Prepare glaze by mixing powdered sugar and lime juice until glaze is smooth. When done baking, pierce cake with wooden spoon handle in 1/2" intervals or 4 places on cupcakes.
4. Drizzle glaze over cake or cupcake evenly. Cool completely. Meanwhile, make frosting by beating cream cheese and butter until light and fluffy. Beat in vanilla and powdered sugar until fluffy.
5. When cool, frost top of cake or frost and swirl cupcakes with the frosting. Store covered in refrigerator.
