Tilapia Filet w/Ginger Shallot Glaze

Ingredients
- 4 tilapia filets
- 1 T canola oil
- 1 T butter
- 2 shallots, sliced thinly
- 1 T thinly sliced ginger
- 2 T mirin
- 1 cup chicken stock
- 1 T soy sauce

Preparation
Step 1
1. Preheat oven to 350 degrees.
2. Heat a small saute pan over high heat.
3. Add the canola oil to the pan.
4. Season the fish with salt and pepper.
5. Add two filets to the pan and sear for 30 seconds.
6. Turn filets over and sear for another 30 seconds.
7. Transfer filets to a sheet tray and repeat with second set of filets.
8. Turn heat down in pan to medium-low.
9. Place fish in oven until firm to the touch.
10. Add butter to pan.
11. Add ginger and shallot to pan and sweat for 2 minutes.
12. Add mirin to pan, reduce until pan is almost dry.
13. Add chicken stock to pan. Simmer until sauce is thick.
14. Season.
15. Pour over fish.
