Angel Hair Pasta with Shrimp and Basil

Ingredients

  • 1/4 cup of olive oil, divided
  • Angel hair pasta
  • 1 teaspoon of garlic, chopped
  • 1 pound of shrimp, peeled and de-veined
  • 2 cans of Italian style diced tomatoes, drained
  • 1/2 cup of dry white wine
  • 1/4 cup of chopped parsley
  • 3 tablespoons of chopped fresh basil
  • Fresh grated Parmesan cheese

Preparation

Step 1

Bring a large pot of water with 1 tablespoon of olive oil to a boil, cook angel hair.

Heat remaining oil in a large skillet and cook the garlic, 1 minute, add the shrimp and cook another 3 - 5 minutes. Remove and set aside.

Stir tomatoes, wine, parsley and basil into the skillet. Cook until the liquid is reduced by half, stirring occasionally. 8-12 minutes.

Add shrimp and continue cooking until shrimp is heated through, 2-3 minutes.

Serve over the pasta and sprinkle with cheese.
