Okra (stewed) with Tomatoes

Ingredients

  • 1/4 C. butter
  • 1/2 C. chopped onions
  • 1 - 2 lbs fresh or frozen okra (cut up)
  • 1/2 C. chopped green peppers
  • 1 (16 oz.) can tomatoes
  • 1 tsp. salt
  • 1/2 tsp. cayenne pepper
  • 1/4 C. chopped celery
  • 1 tsp. chopped garlic

Preparation

Step 1

Melt butter in saucepan.
Add onions, celery and garlic and stir until onions are clear.
Add okra, green peppers and tomatoes.
Cook over medium heat for 10 minutes.
Add salt and cayenne pepper.
Stir mixture and let cook for about 25 minutes or until okra is tender.
