Cauliflower Roasted with Garlic

Ingredients

  • 1 large head garlic, cloves separated
  • 1 large head cauliflower trimmed into florets
  • 1 1/2 T olive oil, divided
  • 2 1/2 t sea salt
  • 1 t ground pepper
  • 1/4 C finely ch. parsley
  • 3 T roasted almonds or pine nuts
  • Juice from 1/2 lemon

Step 1

1. Heat oven to 450 deg. Bring a small saucepan of water to a boil, and add garlic cloves (unpeeled). Boil for 15 seconds. Remove and peel. Cut largest cloves in half lengthwise.

2. On a rimmed baking sheet toss cauliflower, almonds and garlic cloves in oil. Season with salt and pepper. Roast for 25 minutes, turning twice during baking time.
