Ingredients

  • 1 medium red bell pepper
  • 1 cup roasted walnuts (4 oz)
  • 2 Tbl sherry vinegar
  • 2 Tbl chopped parsley
  • 1 large garlic clove, chopped
  • 1/2 cup extra-virgin olive oil
  • Salt

Preparation

Step 1

1. Roast the pepper directly over a gas flame or under a preheated broiler until blackened all over.
2. Transfer to a plate and let cool.
3. Peel: discard the stem and seeds.
4. Coarsely chop the pepper.
5. In a food processor, process the roasted pepper with walnuts, vinegar, parsley and garlic to a paste.
6. With the machine on, slowly blend in the olive oil.
7. Transfer the sauce to a bowl and season with salt.
