Ahhh...that first sip of a mojito will transport you to a beautiful place where there's sand under your toes, and there's no worries.
- 14 large sprigs fresh mint
- 1/2 cup sugar
- 1/4 cup fresh lime juice
- 1 1/2 teaspoons freshly grated lime peel
- 4 cups ice cubes
- 1 cup golden rum
- 3 cups club soda, chilled
Remove leaves from 8 mint sprigs. In blender, combine mint leaves, sugar, lime juice, and peel. Pulse until mint is chopped.
Fill pitcher with ice and add mint mixture. Add rum; stir. Fill with club soda. Pour into glasses; garnish with remaining mint sprigs.
