Amish Hamburger Roast

Ingredients

  • 3 eggs
  • 2 large potatoes
  • 1 onion, finely chopped
  • salt and pepper
  • chopped parsley
  • 2 slices bread made into crumbs
  • 1 tsp worcestershire sauce
  • flour
  • 1/4 pound sliced bacon
  • 1 1/2 lbs ground round
  • fresh parsley to garnish

Preparation

Step 1

1. Hard cook the eggs, shell them and keep them in cold water. Peel the potatoes and cube them. Boil them in salted water until tender, then mash the potatoes and set aside to cool.

2. Combine the mashed potatoes with the ground beef, onion, salt and pepper to taste, parsley, breadcrumbs and worcestershire sauce. Divide the meat mixture in half and shape each half into a thick rectangle.

3. Drain the hard cooked eggs, pat dry and dust lightly with flour. Place the eggs, beginning about 1" from the short edge down the center of one of one of the meat rectangles, spacing them evenly. Place the other meat rectangle on top and mold the meat around the eggs to cover them completely.

4. Preheat oven to 400F. Wrap the slices of bacon around the hamburger roast to cover and tie them on with kitchen string. (I tack them on using toothpicks.) Place in a roasting pan and bake for about 1 1/2 hours or until the meat is completely cooked through.
